Forget the jam-packed sugar treats associated with Halloween and start associating Halloween with delicious food, like this scrumptious soup.

1 tbsp coconut oil/rapeseed oil
Salt and black pepper to taste
1 clove of garlic
1 sweet potato
3 large carrots
1 tsp turmeric
1 tsp cumin seeds
1 tsp Bouillion powder
2 cups of water
Heat the coconut oil on a medium heat in a pot. Peel and chop the onion, add to the oil and saute with a dash of salt until soft. Once soft, add finely chopped garlic and cook for further 30 seconds.
Chop and peel the sweet potato and carrots, add to the pot along with the turmeric and cumin seeds. Stir allowing the flavours to develop.
Add the water (enough to cover the vegetables) and bouillion. Cover with the lid and simmer to 20 mins on a low heat.
Once the vegetables are soft, carefully transfer to a blender and whizz until smooth.
Serve up in bowls. Drizzle with olive oil, sunflower seeds, black pepper and fresh coriander.
