Granola Dust

A quick and convenient way to start your day and busy lifestyle with this nutritious mix of ingredients.  To make life easy for yourself, make a large batch and store in an airtight container.

Ingredients

 

500g porridge oats

125g unsalted mixed nuts

50g Chia seeds, Sunflower, Sesame, linseed or pumpkin

125g dried apricots, dates, figs, or cranberries

1 tablespoons cocoa powder

½  tablespoon freshly ground coffee

Zest of one orange

Method

 

Preheat the oven to 180°C/Gas4. 

 

Mix oats, nuts and seed in roasting tray and roast for 15 minutes, stirring halfway.  Add the dried fruit, cocoa, orange zest and coffee. Grind the mix in small batches in a food processor.  Store in large airtight container.

 

Enjoy the mixture with your favourite milk or natural yogurt and some fresh fruit. Try it as a hot drink – 25g of granola dust with 200ml of your favourite milk.  Its also a great addition to your smoothies.

 

Why not use the mixture as a base for pancakes – 2 heaped tablespoons with 1 heaped tablespoon of self-raising flour, 1 mashed banana and 1 egg.  Cook as you would usually cook pancakes.
